Buckwheat: buckwheat also known as “kuttu” is actually a seed unlike the popular thought of it being a grain. Unlike wheat and rice, it has lower glycemic index. Being richer in protein as compared to wheat, rice and maize, the unique amino acid profile helps regulate the blood sugar levels. Since, the rise in blood sugar levels is not drastic it prevents rapid conversion of blood sugar to fats. This ability comes in handy in preventing chronic diseases like heart diseases, high blood cholesterol and diabetes.
Beans: There is little wonder that beans is featured at the second level of the food pyramid alongside poultry, meat, fish and eggs. Beans are low in fats and sodium and rich in proteins and complex carbohydrates and fibre. They extremely beneficial for diabetics and overweight individuals since they rank low on the glycemic index scale.
