Honey Roastmary Lamb
What you need:
- 2 1/2 kilograms whole leg of lamb
- 3 cloves garlic, minced
- 1/4 cup honey
- 2 tablespoons chopped fresh rosemary
- 2 tablespoons prepared Dijon mustard
- 1 teaspoon lemon zest
- 1 teaspoon coarse sea salt
- 1 teaspoon ground black pepper
To make the marinade, combine garlic, honey, rosemary, mustard, lemon zest and pepper in a bowl. When ingredients are mixed well, cover lamb with the mixture entirely. Cover and refrigerate meat overnight. When ready, place lamb on a roasting pan and season with sea salt. Bake in a pre-heated oven (450 degrees F) for20 to 25 minutes then lower heat to 400 degrees F. Roast for 1 to 1 1/2 hours until desired doneness is achieved.
Rosemary-Butter Red Potatoes
What you need:
- 6 pcs. red potatoes, scrubbed and sliced into wedges
- 3 tablespoons vegetable oil
- 3 tablespoons butter, melted
- 1 tablespoon chopped fresh rosemary
- Salt and ground black pepper to taste
In a small bowl, combine vegetable oil and melted butter then pour mixture into a 9×13-inch baking dish. Arrange potatoes in the dish and toss to coat with oil and butter mixture. Sprinkle with rosemary, salt and pepper. Cover baking dish with aluminum foil then bake in a pre-heated oven (375 degrees F) for 30 to 40 minutes or until potatoes are cooked through and tender.

What you need:
- 8 pcs. chicken thighs
- 6 pcs. red potatoes, scrubbed and quartered
- 1/2 cup extra-virgin olive oil
- 1 tablespoon chopped fresh rosemary
- 1 1/2 teaspoons chopped fresh oregano
- 1 1/2 teaspoons garlic powder
- Salt and black pepper to taste
Mix together chicken thighs and potatoes in a large bowl. Pour olive oil in the bowl and toss to coat meat and vegetable. Place oiled chicken and potatoes in a large baking dish and sprinkle with rosemary, oregano, garlic powder, salt and black pepper. Bake, uncovered, in a pre-heated oven (375 degrees F) for 1 hour.
