Confetti Potato Salad – Weight Watcher Style

My family is invited to a lot of picnics or backyard gatherings during the summer months. We make these family gatherings fun by trying out new recipes. I found a Weight Watcher potato salad recipe that I think is a real winner. My family thinks that it is a great looking dish and it also tastes delicious. 

CONFETTI POTATO SALAD

Ingredients

3 pounds red potatoes, cubed

6 slices turkey bacon

1/2 cup reduced calorie mayonnaise

4 Tbsp. red wine vinegar

4 Tbsp. fresh parsley, chopped

1 Tsp. salt

1/2 Tsp. freshly ground black pepper

1 cup scallions, chopped

Instructions

Bring a large pot of water to a boil. Add the cubed potatoes and a pinch of salt and cook until the potatoes are fork-tender. toes in a large saucepan and pour in enough water to cover them. Heat on high and bring to a boil. Reduce heat to medium and simmer until potatoes are fork-tender, about 15-20 minutes. Drain well.   

Cook bacon in a hot skillet or in the microwave until crisp. Drain on paper towels. Break bacon into small pieces. 

 Combine mayonnaise, vinegar, parsley, and salt and pepper in a small bowl.

Transfer cut potatoes to a large bowl. Add bacon and scallions. Add dressing mix and toss until well coated.

Makes 8 (3/4 cup) servings.

Variations

You can make this potato salad even more colorful by substituting chopped red onions for the scallions. For an even crunchier potato salad, add 1/2 to 1 cup of chopped celery.

I made this potato salad for a covered dish luncheon a few weeks ago. It was a great success and several people asked me for the recipe.
