Brazilian Recipe – Casquinha de Siri

The population of Brazil is the result of a mixture of Europeans, Amerindians, Africans and

Asians. This has reflected in the food, creating a very versatile cuisine.

Geographically the country is divided into five regions (North, Northeast, Central-West,

Southeast, and South) and each of these regions has a distinctive culinary, with typical

ingredients.

Casquinha de siri is a Brazilian dish made with crab meat, and it is common in different regions.

There exists some variations of the recipe. This one is prepared with coconut milk, palm oil,

tomatoes, Parmesan cheese, and bread crumbs.

See below the list of ingredients that you need to prepare this recipe and its directions:

2 pounds crab meat, drained if using canned

3 tablespoons Olive oil

4 tomatoes, peeled, seeded and chopped

1 tablespoon palm oil

3/4 cup of coconut milk

2 tablespoons fresh chopped parsley

2 tablespoons fresh chopped green onions

4 tablespoons flour

Bread crumbs

grated Parmesan cheese

Salt and pepper to taste

Heat olive oil and saute onions until soft. Stir in crab meat for 3-5 minutes. Add tomatoes and simmer for 5-8 minutes.

Add coconut milk, salt, pepper and palm oil, cooking for 3-5 minutes. Remove from heat, add flour at small quantities, stirring continually. Bring the pan back to heat, cooking until get a cream. Stir in parsley and green onions. Remove from heat.

Fill the shells with this mixture, top with bread crumbs mixed with Parmesan cheese. Bake for 15-20 minutes or until lightly brown.

Serve it with a cold beer. It´s simply delicious !!!!
